When I create a Pin in Canva with an Etsy link and “Publish to Pinterest”, it replaces the description I wrote with the full Etsy product listing description. Why is this happening and how can I avoid this?

This happening likely because of the Canva interface. We recommend our students to always directly upload and publish pins to Pinterest first (and not via Canva or any other app).
